Red Pepper Buda Bowl ๐Ÿฒ Iโ€™ve included a simplified version of the recipe below but if you would like to read the full version check out my website (link in bio) ๐Ÿฅ— Ingredients for Bowl: 1 Red Bell Pepper 1 Tin of Chickpeas Chilli, Paprika & Turmeric Couscous Spinach Sesame Seeds Olive Oil Avocado Chicken (optional) Ingredients for sauce: 1 Red Bell Pepper Half a Lemon Olive Oil Method: 1. In a baking tray, use one half of the tray to cook your unseasoned cut bell peppers sprinkle with olive oil 2. In the other half of the tray season your chickpeas to taste with chilli, paprika, turmeric, sprinkle with olive oil - cook for 30 mins 3. Optional step - Cut your chicken into small chunks and fry on the hob for about 30 mins and season to taste with salt and pepper 4. Add water to your couscous (check packaging for amount of water to use but as a general rule of thumb use slightly under 2:1 - water:couscous) and put on the hob for 10 minutes 5. Prepare your red pepper sauce in a blender with your other bell pepper, half a lemon and olive oil 6. Prepare your bowl with a bed of spinach and place your couscous in the middle. Pour the sauce on top and add chickpeas and peppers around the sides.
